raw fabulous avocado power bars

Raw, Vegan and filled with Energy.

This is a super delish recipe. I can highly recommend it for a sweet tooth day and it is equally easy to prepare.

Catch:  Avocados and bananas oxidize quickly. The fabulous green avocado color starts fading within 2 hours. The bars are still uber tasty to eat the next day, but if you want to serve them with a nice green color prepare the bars 1 hour before serving and indulge.

Keep in the fridge for a max of 48 hours (BUT don't worry, they are gone within the first 2 hours).

Ingredients:

Bottom layer

·         2 cups shredded coconut

·         2 tbsp raw cocoa powder

·         2 tbsp rice malt syrup or maple syrup

·         ½ cup virgin coconut oil, melted

·         2 tbsp almond butter

·         1 tbsp vanilla extract

Middle layer

·         1 large avocado

·         2 medium bananas

·         ½ cup virgin coconut oil, melted

·         ½ cup sliced almonds

·         1 tbsp vanilla extract

Top layer

·         ¼ cup raw cocoa powder

·         ¼ cup virgin coconut oil, melted

·         1 tbsp rice malt syrup

Instructions:

Bottom layer

·         Pour all ingredient in a stand mixer.

·         Blend approx 1 minute or until all the

          mixture is  consistent.

·         Transfer into a square pan covered with

           plastic wrap.

·         Refrigerate while preparing the middle layer.

Middle layer

·         Slice the bananas and diced the avocado.

·         Transfer all the ingredients into a stand mixer.

·         Blend until smooth and consistent.

·         Pour the mixture onto the first layer.

·         Return to the fridge while preparing the

          top layer.

Top layer

·         In a bowl combine the raw cocoa powder

          with melted coconut oil and the rice malt syrup.

·         Brush the top of the slice with this mixture.

·         Decorate with shredded coconut.

·         Refrigerate for 15 minutes until the top is solid.

·         Cut into square and store in a airtight

          container in the fridge for a maximum of 2 days
